Apple Pie Filling

Ingredients:

10 cups of sliced and peeled apples (use a mix of sweet and tart varieties)

2 1/2 cups granulated sugar

2/3 cup cornstarch

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

4 cups water

1/2 cup lemon juice

6-8 quart-sized canning jars with lids and bands

Instructions:

Prepare your canning jars by washing them in hot, soapy water and sterilizing them in boiling water. Keep them hot until you're ready to use.

In a large pot, combine sugar, cornstarch, cinnamon, nutmeg, and salt. Stir in the water and bring to a boil, stirring constantly until the mixture thickens and bubbles.

Add the lemon juice and sliced apples. Stir to coat the apples evenly. Simmer for 5 minutes.

Ladle the hot apple pie filling into the prepared jars, leaving about 1 inch of headspace. Remove air bubbles and adjust the headspace if needed.

Wipe the jar rims clean, place lids and bands on the jars, and process them in a boiling water bath for 25 minutes.

Remove the jars from the water bath, let them cool, and ensure the lids are sealed properly before storing them in a cool, dark place.
