Quinoa and Black Bean Bowl with Avocado and Lime (Gluten-Free and Vegan)

Ingredients for Quinoa and Black Bean Bowl:

  • 1 cup cooked quinoa

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 avocado, sliced

  • Lime wedges, for serving

  • Salt and pepper to taste

Ingredients for Lime Dressing:

  • Juice of 2 limes

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • 1 teaspoon ground cumin

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro.

  2. In a separate small bowl, whisk together the lime juice, olive oil, minced garlic, ground cumin, salt, and pepper to make the dressing.

  3. Pour the dressing over the quinoa and bean mixture and toss to combine. Adjust salt and pepper to taste.

  4. To serve, divide the quinoa and black bean mixture into bowls, top with avocado slices, and serve with lime wedges on the side.
