Southern tomato basil pie
Ingredients:
For the crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold unsalted butter, diced
1/4 cup ice water
For the filling:
4 large ripe tomatoes, sliced
Salt and pepper to taste
1 cup fresh basil leaves, chopped
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
2 cloves garlic, minced
Instructions:
Preheat your oven to 375°F (190°C).
In a food processor, combine the flour and salt. Add the diced butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water and pulse until the dough comes together.
Turn the dough out onto a floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
Roll out the dough on a floured surface to fit a 9-inch pie dish. Press the dough into the bottom and up the sides of the dish. Trim any excess dough and crimp the edges.
Arrange the sliced tomatoes in the pie crust, overlapping them slightly. Season with salt and pepper, then sprinkle the chopped basil over the tomatoes.
In a small bowl, mix together the mozzarella, Parmesan, mayonnaise, and minced garlic. Spread this mixture evenly over the tomatoes.
Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
