Bacon Jam
Bacon jam is a savoury and flavorful spread that adds a rich and smoky touch to various dishes. Here's a simple recipe for making bacon jam:
Ingredients:
1 pound (about 450g) bacon, chopped into small pieces
1 large onion, finely diced
3 cloves garlic, minced
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup apple cider vinegar
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes (optional, for some heat)
1/2 cup strong brewed coffee
Instructions:
In a large skillet or frying pan, cook the chopped bacon over medium heat until it becomes crispy. Remove excess fat, leaving about 1-2 tablespoons in the pan.
Add the diced onion to the pan and cook over medium heat until softened and caramelized, about 5-7 minutes.
Add minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.
Stir in brown sugar, maple syrup, apple cider vinegar, black pepper, smoked paprika, and red pepper flakes (if using). Mix well.
Pour in the strong brewed coffee and stir, scraping the bottom of the pan to release any flavorful bits.
Reduce the heat to low and let the mixture simmer for 30-40 minutes, or until it reaches a jam-like consistency. Stir occasionally to prevent sticking.
Once the bacon jam has thickened, remove it from the heat and let it cool slightly.
Transfer the bacon jam to a food processor and pulse a few times until you reach your desired consistency. You can make it chunky or smooth based on your preference.
Allow the bacon jam to cool completely before transferring it to sterilized jars or airtight containers.
