Cucumber Watermelon Salad

Ingredients:

  • 2 cups cubed watermelon

  • 1 cucumber, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons chopped fresh basil leaves

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon lime juice

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the cubed watermelon, sliced cucumber, crumbled feta cheese, and chopped basil leaves.

  2. In a small bowl, whisk together the extra virgin olive oil and lime juice. Pour the dressing over the salad and gently toss to coat.

  3. Season the salad with salt and pepper to taste.
