Garlic Butter Green Beans

Ingredients:

  • 1 pound fresh green beans, trimmed

  • 2 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes (optional, for a hint of heat)

  • Salt and pepper to taste

  • Lemon zest (optional, for a citrusy twist)

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Wash the green beans, and trim off the ends. If the beans are long, you can cut them in half for easier handling and cooking.

  2. In a pot or skillet, bring water to a boil. Add a wee bit of salt to the boiling water.

  3. Add the green beans to the boiling water and cook for about 3-5 minutes until they are tender-crisp. You want them to be cooked but still have a slight crunch. Don't overcook them, or they'll become mushy.

  4. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process and preserve their vibrant green colour. Let them sit in the ice water for a minute or two, then drain again.

  5. In the same pot or skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (omit red pepper flakes, your preference.) Sauté for about 1-2 minutes until the garlic becomes fragrant, but be careful not to burn it.

  6. Add the blanched green beans to the garlic butter mixture and toss to coat the beans evenly. Cook for an additional 2-3 minutes, allowing the flavours to meld and the beans to heat through.

  7. Season with salt and pepper to taste. If you prefer a tangy twist, add a sprinkle of lemon zest to brighten up the dish.

  8. Transfer the garlic butter green beans to a serving dish, garnish with freshly chopped parsley, and serve immediately.
