Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (any color)

  • 1 cup cooked quinoa or rice

  • 1 cup cooked and seasoned ground beef or turkey

  • 1 cup diced tomatoes

  • 1/2 cup corn kernels

  • 1/2 cup black beans, drained and rinsed

  • 1/2 cup shredded cheddar cheese

  • 1 teaspoon chili powder

  • Salt and pepper to taste

Instructions: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. In a mixing bowl, combine cooked quinoa, seasoned ground meat, diced tomatoes, corn, black beans, shredded cheese, chili powder, salt, and pepper. Stuff each bell pepper with the mixture and place them in a baking dish. Cover with foil and bake for 25-30 minutes or until the peppers are tender and the filling is heated through.
